1 buong biik na baboy (mga 10 – 15 kilo)

Paraan:
Ang pagluto ng lechon ay para lamang sa may tiyaga. Ito ay matagal gawin ngunit tiyak na masarap. Lechon pinakasikat na handa tuwing may pista. Kaya nga’t ito ang ating pambansang ulam.
Ingredients:
2 tbsp instant yeast
¼ cup warm water
2 cups cake flour, sifted
3 1/3 cups all-purpose flour, sifted
1 teaspoon salt
½ cup plus 2 tablespoons sugar
4 egg yolks
1/3 cup butter
1 ½ cups lukewarm milk
2 tbsp flour for kneading
Procedure:
- Dissolve yeast in warm water.
- In a bowl, combine both flours, salt and sugar. Mix well.
- In a mixing bowl, put in egg yolks, butter, milk and yeast mixture.
- Using an electric mixer (set to low speed), mix ingredients and then add the flour mixture a little at a time. Stop machine every now and then to scrape the sides of the bowl.
- Stir in remaining flour mixture until smooth and increase speed to medium for about 2 minutes until dough begins to pull away from the bowl
- Sprinkle flour for kneading on a clean table.
- Knead dough until all the flour is incorporated.
- Form into a ball and transfer the dough to an oiled bowl.
- Cover with plastic and let rise in a warm place until dough doubles in size, about 50-60 minutes.
- Punch down the dough, transfer to the floured surface and roll around lightly to coat with flour.
- Gently roll dough until half-inch-thick using a floured rolling pin.
- Cut with floured doughnut cutter. Cover and let rise until they double in size. (About 30-40 minutes)
- Heat vegetable oil in a deep fryer at 350 degrees at fry doughnuts on both sides until golden brown. Makes about 30 doughnuts.
Caramel Glaze:
- In a heavy saucepan over medium heat, combine 1 ¼ cups sugar, ¼ cup water, and 1 teaspoon lemon juice.
- Bring to boil and dissolve sugar completely. Cook syrup until golden caramel in color. Stir in ¾ cup plus 1 tbsp heavy cream and 1 tbsp butter, and mix until smooth.
- Remove from heat and stir in 1 teaspoon vanilla extract.
- Dip cooled donuts in the glaze and serve.
Chocolate Glaze:
- In a double broiler, place 200 grams finely chopped bittersweet chocolate and a tbsp vegetable oil and melt completely.
- Dip cooled donuts in the glaze and serve.
- You can also top donuts with peanuts or anything you like.

4 cups double-strength freshly brewed dark roast coffee

Procedure:
Place the ice, coffee, sugar and syrup in a blender. Blend until the frappe is smooth. Pour into a large, tall glass. Garnish with a dollop of whipped cream.
Ingredients:
1/2 Kilo Squid, cut into serving pieces or 1/12 cup squid balls
1 tbsp garlic
2 medium size onions
2 tbsp oyster sauce
1/2 cup banana ketchup
1 tbsp sugar
1 medium size carrot, cut into cubes
1 medium size bell pepper, cut into cubes
salt and pepper to taste
4-5 pieces baguio beans, cut into halves
Hot sauce (optional)
Procedure:
Sautee garlic and onions in a wok, add the squid. Let it simmer for 5 minutes. Add the banana ketchup, oyster sauce and sugar. Then add the vegetables, hot sauce and seasonings. Simmer for another 5-10 minutes. Put in a sizzling plate and serve hot.
